Mini Doughnuts Recipe & Vancouver's Best Doughnuts

Has anyone else noticed the new doughnut fad? They’ve always been around, but recently, they’ve been gaining more popularity as something that doesn’t necessarily need to be eaten with coffee or tea. Doughnuts are getting much fancier nowadays with flavours such as salted caramel, earl grey or even bourbon bacon. They’re even getting popular as a wedding cake alternative.

Regardless, I’ve always loved doughnuts. Whether it’s the ordinary Tim Horton’s, rich Krispy Kremes or the decadent ones from Cartem’s Donuterie, I love them—unfortunately they do not reciprocate my love, much like most of the sweets I adore. The sugar, the fat, the additives. So what better way to combat these than baking my own doughnuts! I also finally got around to buying one of these adorable little mini doughnut pans.

Feeling that doughnut craving coming on? Here are some of the best places to get doughnuts in Vancouver:

Cartem’s Donuterie
: One of the newest additions to Vancouver’s dessert scene. Has a great selection of unique doughnuts.

Romer’s: Yes, it’s a burger place, but their Drunken Doughnuts are to die for. Little sugary deep-fried mini doughnuts with Kahlua Nutella , Limoncello and Maple Whisky dipping sauces on the side.

Tim Hortons: Cheap doughnuts that (almost) never disappoint. I’ve only had one stale apple fritter there in my life. Great variety of traditional flavours, baked doughnuts, affordable prices.

Baked Mini Doughnuts Recipe


Makes: 36
Oven: 425 degrees

Ingredients


  • 1 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk (or 1/2 cup milk plus 1 teaspoon white vinegar)
  • 1 egg, lightly beaten
  • 1 1/2 tablespoons melted butter or margarine

Directions

  1. Preheat oven to 425F. Grease down mini doughnut pan.
  2. Sift together flour, baking powder, sugar and salt.
  3. Soften butter and beat until smooth. Mix in buttermilk and beaten egg.
  4. Beat batter until smooth. Then, using a disposable sandwich bag or piping bag, fill doughnut pan. Be sure to fill the holes only to ½ full otherwise the doughnuts will overflow.
  5. Bake doughnuts for about 5 minutes or until the doughnuts spring back when gently pressed.
  6. Glaze when cooled.

Below are a few glaze and dipping options. My favourite was the cinnamon sugar, hands down. Tasted just like the ones at the fair.

Chocolate Glaze Recipe


I used Southern Pink Lemonade’s Chocolate Glaze recipe.

  • 1/2 cup of chocolate chips
  • 1 tbsp canola oil 
  • 2 tsp corn syrup
  • 1 tsp lukewarm water

Directions

  1. Melt chocolate chips (I did it with a hot water bath because I find using a microwave is hit or miss sometimes) and stir until smooth. 
  2. Add in oil, corn syrup, water.


Vanilla Glaze Recipe


Ingredients

  • 1/2 C powdered sugar
  • 1/2 tsp vanilla
  • Add cold milk until smooth and thin. (1 to 2 tablespoons)

Directions

  1. Mix together all ingredients until mixture reaches smooth, thin consistency.

Cinnamon Sugar Recipe

Ingredients


  • 1 tsp cinnamon (or more depending on your taste)
  • 1/2 cup granulated sugar
  • Melted butter

Directions

  1. Mix together cinnamon and sugar until evenly blended.
  2.  Dip doughnut in melted butter with slotted spoon. 
  3. Let butter drip off before sprinkling with sugar mixture.
